Raise your hand if you’re a Mexican food lover. Anyone? Everyone? We have some sort of Mexican food at my house at least once a week. Mainly because it can be oh so easy and everyone will eat it. These huevos rancheros toastadas have quickly risen to the top of my Mexican go-to recipes. My reasons being threefold:
Depending on how you heat up your beans this can take between 10 and 15 minutes. Everyone has 10 minutes right? All you’ve got to do is cook your eggs and heat up your beans. I have a few other quick and easy meals on the blog (here and here). I have made these with a few different types of beans. Surprisingly, the jalapeno refried beans ended up being my favorite. If you’re looking to be adventurous, give those a shot. Otherwise, just use the type of beans that you pick when you’re at Cafe Rio. 😉
2. It’s cheap
I’ll admit, I’m a meat eater. A total carnivore. But, I can end up dropping a good portion of my grocery bill on meats if I’m not careful. I try to make at least two meat-less meals a week and use things like eggs and beans as protein instead. What do you know? These toastadas are loaded with protein but don’t require any expensive meats.
3. It’s Customizable and Everyone Loves It
I make this toastadas a little differently every time. Sometimes I add avocado or use salsa instead of pico de gallo. Use any of your favorite toppings or whatever it is that you have on hand. I’m big into making recipes your own. It’s rare that every part of a recipe will suit your taste. So never be afraid to customize!
