Instructions
  1. Preheat oven to 400
  2. Line the chicken, asparagus, and corn (cut off of the cob) on a cookie sheet
  3. Drizzle olive oil, garlic, and salt on a cookie sheet and toss until it’s evenly coated
  4. Roast in the oven for 25 minutes or until the chicken is cooked through
  5. While the salad is in the oven make the dressing by adding all of the ingredients in a blender and blend until smooth
  6. Remove the salad from the oven and toss with the dressing and sliced apples
  7. Serve warm alone or over a bed of spinach.
