Red Onion Sauce
Instructions
  1. Preheat oven to 400 degrees
  2. Slice red onion in thin slices and set aside
  3. On the stove melt butter over medium-low heat in a large skillet
  4. Add red onion to the skillet and saute until translucent (about 7-10 minutes)
  5. When the onions are soft and translucent remove the skillet from the heat and add the balsamic vinegar
  6. Pour the red onion mixture into a food processor or blender and blend until smooth
  7. Remove the flatbread from the package and spread the red onion sauce over the top as thick as you’d like
  8. Top with goat cheese and cherry tomatoes
  9. Place flatbread directly on oven rack and cook for 7-8 minutes or until golden brown
  10. Remove the flatbread from the oven and top with arugula. You can drizzle a bit of balsamic vinegar or reduction over the top if you’d like a bit stronger balsamic flavor.
  11. Slice and enjoy!
