White Cake
  1. Preheat oven to 350
  2. Add egg whites to the bowl of a stand mixer and whip until stiff peaks form
  3. Transfer egg whites to a separate bowl and set aside
  4. Sift together the dry ingredients (flour, sugar, baking soda, baking powder, and salt)
  5. Add sour cream, oil, and almond extract and mix until well blended
  6. Gently fold in the eggs whites
  7. Divide the batter between three prepared 8 inch rounds
  8. Bake for 20-22 minutes
Cream Filling
  1. In the bowl of a stand mixer start whipping the cream and add in the powdered sugar
  2. When the cream begins to thicken add the vanilla pudding until it is smooth
  3. Spread between layers of the cake and top with sliced peaches
Peach Frosting
  1. In a blender or food processor blend one peach into a puree
  2. Cream together the butter and cream cheese
  3. Slowly add in the powdered sugar
  4. Add the peach puree until desired consistency.
  5. Frost on the outside of the cake
