Peanut butter rice cereal bars with a creamy chocolate, butterscotch topping. Perfect for a quick and easy treat.
This little treat is probably the fastest, easiest, and TASTIEST thing you will ever make. Seriously. The other day my mom forgot about a pot luck lunch she was invited to and had 10 minutes to scrounge up something to bring. We whipped up a quick batch of these scotcheroos and she was out the door with minutes to spare. Quick, easy, and always a crowd pleaser.
When we were kids my mom always made these in the summer time. We would all play outside and run through the sprinklers or build a little homemade slip and slide with a plastic tarp. The only thing that could bring us back inside was the fact that all of that running around worked up an appetite and we were “STARVING”. Of course that always produced a little lecture about how we don’t really know what it’s like to be starving. We would run inside soaking wet, leave a nice water trail into the kitchen, and see a pan of O’Henry bars waiting for us on the counter. That pretty much rounded out a perfect summer day for a 9 year old.
Do you know why my mom made these particular treats so often in the summer? They are no-bake! There is nothing worse than having to turn on your oven when it’s 100 degrees outside. Nobody wants to turn their already warm house into a full-blown sauna. But just because it’s hot outside does not mean our sweet tooth suddenly disappears. No-bake treats are the perfect summertime solution. These are made completely on the stovetop and microwave. Let’s save the oven for the winter months. Yes?
These babies are also a great one for the kids to make (or help make). The steps are so simple and there is very little patience involved. Not to mention there are several delicious spoons and bowls to lick. What are some of your favorite easy or no-bake recipes? I’m always dying to find more!
