Have you ever had the mango key lime cheesecake from Cheesecake Factory? (Definitely one of their top 5) Well this coconut mango cheesecake is not really like that. But it is inspired by that.
There are several copycat recipes for Cheesecake Factory cheesecake and, to be truly honest, they all seemed like too much work. I am all for spending a little extra time on a special dessert but sometimes you need something that tastes fancy but only took you 30 minutes. I am willing to bet that the latter happens 5 times more often.
Just for you I made this cheesecake a no-bake recipe, only calls for one package of cream cheese( versus the four packages that other recipes call for), requires no eggs or crazy prep times.
The crust is made from graham crackers and toasted coconut. I decided on toasting the coconut to achieve a crunchier texture on the bottom. If you like a softer crust or just don’t want to take that extra step you skip toasting the coconut and use it as is.
If you really want to go for quick and simple: swap out the coconut crust recipe for a store bought crust and slice up fresh mangos to put on top in place of the mango topping. All of the same flavors for even less time.
