A super soft almond, poppy seed, white cake with a tangy lemon curd and creamy blackberry frosting
My hubby’s birthday was on Sunday which marks the start of our birthday month. His birthday is the 9th of April and mine the 9th of May. Somehow we managed to squeeze both of our boys’ birthdays in between ours. So we pretty much have a month of straight celebration. I love it. I love it because I love to celebrate the people I love and, more importantly, we get to eat cake. This week was a lemon, blackberry, poppy seed cake.
I tried to shorten the name of this cake but all of these words are critical elements of the cake. It’s an almond, poppy seed, white cake with lemon curd, blackberry frosting, blackberry reduction, and fresh blackberries. It might be over the top but if there’s every a time to go over the top it’s for your beloved husband’s birthday. Right? He about died when he saw how this cake turned out. Not that he didn’t love it. But it was a bit on the girly side (sorry! blackberries are NOT black!). So we just agreed that there would be not pictures posted with him and the cake on social media. I could handle that.
My toddler couldn’t resist eating all of the blackberries off the top of the cake along with all of cute little frosting swirls. The baby, on the other hand, is basically a food addict and probably ate more cake than I did. Talk about a sugar overload for that little 11 month old body. Hashtag momfail.
