This winter has been brutal and I am so glad to finally see some sunshine! I can’t tell you how excited I am to take the kiddos outside because I am running out of indoor activities FAST. I think my boys are getting sick of coloring and blocks. So I’ve been celebrating by cooking up a bunch of spring-y recipes. Doesn’t chicken salad just make you think of a picnic in the park? Pasta salad too. And grapes. And fruit snacks. And potato chips. Alright, I’m heading far away from my light and healthy spring picnic.
I love this chicken salad recipe because it has all of the flavors of a traditional chicken salad without all of the fat that comes from the mayo. It’s totally customizable too. Lots of people like to add water chestnuts or dried cherries. I like to scoop it on top of lettuce and make it into a salad. My hubby and kids love it on a croissant. We also spread it over toast or roll it up in a wrap. It’s all good.
This recipe is pretty fool proof and only takes minutes to make. Cooking your chicken breasts is the only step that takes any time at all. You can bypass this step by just pulling apart a rotisserie chicken. Bam. 5 minute meal. If you use chicken in a lot of meals or for lunches just grill up a big batch at the beginning of the week and you can have it handy for recipes like this one.
Now, I think I’ll go finish packing my picnic. The snow is almost melted and I’m going to go enjoy that sunshine. Even if it’s still a bit chilly.
