Fresh peaches, creamy topping, crunch ginger snaps. Bam
I love desserts. I guess because I’m just such a sweet person 😉. I kind of consider myself a professional dessert eater. This fresh peach pie is easily in my top five favorite desserts if not my all-time favorite. My family has been making it for years. I asked my mom to make this pie for my birthday several years in a row (which is a challenge since my birthday is nowhere near peach season). So if you’re wondering whether or not you will swoon over this pie, you will.
I grew up eating exclusively homemade pie. I don’t think I had ever tried a store bought pie until after I had moved to college. So I’m kind of a pie snob. ESPECIALLY when it comes to the crust. If the crust isn’t flaky and completely melts in your mouth is it even worth eating? This is my favorite pie crust (link here) if you haven’t found one that you like yet. I’ve been experimenting with crusts using butter or lard but I’ve had issues with them holding their shape. I’ll keep you posted on my findings!
Fresh fruit and cream and kind of like two peas and a pod. It just works. That’s one of the reasons I love this pie so much. Fresh peaches people. I’ve got major texture issue when it comes to food so I really struggle with cooked fruit. As much as I love peaches I cannot make myself eat a baked peach pie. That’s probably not very sophisticated of me but that’s just the way I am. Something about slimy, mushy fruit just gets me. Any one else??
You want to know the cherry on top? Well, it’s actually not a cherry at all; it’s GINGER SNAPS. Say what? This pie has crunchy ginger snaps crumbled on top which you might think is just for garnish but that’s just not true. The flavor of peaches and ginger snaps compliment each other so well. It’s kind of amazing. Plus having a little bit of crunch adds an extra punch.
In conclusion: I’m really in love with this recipe and I’m so exited to share it with the world!! Enjoy!!
