A decadent and fluffy chocolate cake with a rich and creamy chocolate frosting drizzled with a touch of raspberry sauce.
This glorious double chocolate cake was my birthday cake this year. Lucky me right? People have been giving me a hard time about making my own birthday cake. But let’s be honest, making cake is one of my favorite things in this whole world. So, letting me make my own birthday cake is probably the best gift anyone could give me. However, it’s not hard to spend an entire day making and decorating a cake. So I kept this one simple and tasty. Because I didn’t want to spend the WHOLE day in the kitchen.
Now let’s talk about the cake. I hate to brag. But this is the best chocolate frosting you will ever have. (Except maybe the Nutella frosting from these Nutella brownies). It’s not a very stiff frosting so it’s not ideal for decorating because it’s just too smooth and creamy and chocolaty (so horrible right?). The melted chocolate chips folded into the frosting make it sort of ganache-like in texture.
The texture of the cake is pretty light and airy but really decadent all at the same time. Because the cake is so rich I love to drizzle a little bit of a tart raspberry reduction over the top to balance it out. It certainly doesn’t need it but I just love to add raspberries to everything chocolate. Because it just works.
We’ve got Mother’s Day coming up this weekend and I’m voting for this cake! It’s so simple that even the kiddos and hubby can handle it (no offense ;)) So go ahead and pass it along to the hubs because you know you want it.
