I have been so excited to write this post I can barely contain myself. My house is a disaster (but, let’s be honest, it’s always a disaster), recipes need to be tested, and I should really take my kids to the pool. But I am just too excited about this cashew ice cream to wait to share it with you. It would be selfish of me to put it off any longer.
The boys in my family are all lactose intolerant. My husband has it a little easier than the kids because he’s able to take a lactaid pill and prevent most of the stomach ache. We get by pretty well by just not bringing milk, cheese, ice cream etc in the house and the kids don’t really know what they’re missing. But every once in a while a little boy just needs an ice cream cone! So many of the dairy free ice creams that I’ve found at the store are super pricey or super icey (like how I rhymed there?). The cashews in this recipe help make the ice cream super creamy and I love it! (If you’re looking for a full on super dairy, full-fat, sugary ice cream, you should give this recipe a try.)
I used maple syrup to sweeten the ice cream mostly for the flavor. Maple, cashew, and fig blend really well together. If you are using pure maple syrup as a sweetener you can get away with calling this recipe “refined sugar-free”. I won’t pretend like it’s good for you, it is still ice cream. The figs, honey, and maple syrup make it plenty sweet. The other thing that I love about this recipe it that it’s no-churn! Just pour it straight into a bread pan (I use this one here), pop it in the freezer and you’re good to go!
This recipe was extra fun and a little bit of a challenge because I’m a little bit of a fig newbie. I had never tried these golden figs until I opened the bag to test this recipe. Guess what? They are SO GOOD! Think Fig Newton but even better! As soon as you open the bag you can smell their deliciousness. The figs taste and smell really sweet like maple or honey. I can’t quite put my finger on it! I will say that I was pleasantly surprised at how much I liked these figs. Here is the link to what I used.
