Hey foodie friends! It has been a quiet week over here. My oldest (and craziest) is with Grandma this week. I almost don’t know what to do with myself. Almost. I’m trying to get a little bit of sleep and some extra snuggles with the baby. And, of course, test LOTS of recipes. I’ve been meaning to get this peanut butter bites recipe up on the blog for a while now. It’s about time that I made that happen!
These little peanut butter bites (or, as my kids affectionately call them, peeny budder balls) are my kids absolute favorite and a life saver for me when I don’t have time to fix a healthy snack. I have to at least triple the batch for these babies to make it through half of a week. But they’re fairly healthy so I don’t feel all that terrible about letting them eat five or six in a day. That’s ok right?
Some of my favorite foods are chocolate chips, peanut butter, sunflower seeds, and oats. So I rolled them all together into one little bite sized snack! There’s no gluten, dairy (if you pick the right chocolate chips) or refined sugar so they’re basically healthy. My husband went out of town for a couple week a few months ago when I was spending a lot of time doing freelance research. I basically lived off of these peanut butter bites and Diet Dr. Pepper. I wouldn’t recommend solely eating these for breakfast lunch and dinner but they DO make an excellent and super filling snack.
