BBQ Chicken Stuffed Sweet Potatoes
Twice baked sweet potatoes stuffed with chicken, bbq sauce, and pepper jack cheese

large chicken breasts

Preheat oven to 350 degrees
Wrap sweet potatoes in tin foil, place on a cookie sheet, and bake in the oven for 30 minutes
Remove the potatoes from the oven
Wrap the chicken breasts in a tin foil packet and sprinkle with salt and pepper
Place the packet of chicken on the cookie sheet with the potatoes, return to the oven and bake for 20 more minutes.
Remove sweet potatoes from the oven, slice them down the center (leaving half an inch on either end) and scoop the sweet potato into a bowl.
Remove the foil around the chicken and shred the chicken
Add the butter, bbq sauce, chicken, and green onion into the bowl and mix
Scoop the mixture back into the sweet potato skins and top with cheese
Return to the oven for 5 more minutes
Garnish with green onion.
