Peach and raspberry bruschetta with a sweet honey and goat cheese spread.
I am all about quick and simple meals. It’s hard to find the time to cook intricate dishes. But that doesn’t mean I don’t like some good sophisticated food every once in a while! You can have both my friends. Case in point: raspberry and peach bruschetta with honey goat cheese spread
Sometimes you need to feel a little fancy. Especially all of my mammas out there. You can only feel so beautiful and classy with mud, chocolate, and Heaven knows what else smeared across every inch of you. A little adult friendly food is good for the soul; I’m telling you.
I had a doctors appointment yesterday, during which my mom so graciously watched my children. I showed up wearing a grey dress (because I REFUSE to wear pants between June and September). At first he thought I had just come from somewhere nice but as he started to examine me he notice a giant chocolate stain and quickly realized he was mislead. Such is my life.
Go enjoy some easy, sophisticated food. You deserve it.

Honey Peach Bruschetta with Goat Cheese
A sweet bruschetta with fresh peaches and raspberries, goat cheese, and drizzled with honey
- 1/3 cup crumbled goat cheese
- 2 tablespoons honey
- 1 peach thinly sliced
- 1/2 cup fresh raspberries
- 1 skinny crusty baguette
- 1 tablespoon butter softened
Preheat the oven to 450 degrees
Slice the baguette into 1/4 inch slices
Spread a small amount of butter on each slice of bread and place them on a cookie sheet
Toast the bread sliced in the oven for 5 minutes
In a small bowl mix together goat cheese and 1 tablespoon of honey
Spread the goat cheese mixture between each of the sliced piece of bread
Top with a raspberry, slice of peach, and a drizzle of honey
