I’m just going to say this flat out: these brownies will change your life. I feel pretty confident in that statement. This recipe came about on a whim when I just needed that perfect of marriage of peanut butter and chocolate. All of that ooey gooey goodness can completely save a bad day. So three hours of sleep and two screaming children later and these stuffed peanut butter brownies were born.
Often times when my kids are having an emotional melt down I’ll slip them a few chocolate chips and say, “chocolate makes everything better.” Does that make me a terrible mother? I’m sure that teaching them to soothe their emotions with food in not necessarily the best life lesson. But it’s kind of the truth. While ooey gooey brownies don’t make your problems go away they do make life seem a little brighter.
On top of their mood boosting power, these brownies are super simple. Very little baking knowledge is involved in the production of these super powered goodness bars. The recipe starts with a box of brownie mix and a few other ingredients that you most likely already have on hand. So, when you’ve had a hard day and can’t muster the strength to bake anything worth while this recipe will save the day.
This post sounds like I think very highly of myself and this recipe. But the fact is: I care about you. You need this in your life.

Easy Stuffed Peanut Butter Brownies
These easy gooey fudge like brownies start with a box mix and are stuffed with peanut butter filling and topped with melted chocolate and drizzled with peanut butter.
- 1 box brownie mix prepared
- 2/3 cup peanut butter plus 2 tablespoons for drizzling
- 1/2 cup powdered sugar
- 1 cup semi sweet chocolate chips
Preheat oven to 350 degrees
Prepare brownie batter according to package directions and set aside
In a separate bowl mix together the peanut butter and powdered sugar
Scoop the peanut butter mixture onto a piece of wax paper. Place another piece of wax paper on top of the peanut butter.
Using a rolling pin, roll the peanut butter mixture into an (approximately) 8X8 inch square
Pour half of the brownie batter into a greased 8X8 inch square pan
Place the rolled out peanut butter on top of the brownie batter
Pour the rest of the brownie batter on top of the peanut butter layer
Evenly sprinkle the chocolate chips on top of the brownie batter
Bake in the oven for 20-30 minutes. Or until a toothpick comes out with crumbs instead of batter (try not to stick the toothpick into a chocolate chip) DO NOT OVER COOK
After you have removed the brownies from the oven melt 2 tablespoons of peanut butter in a microwave safe dish
Drizzle the melted peanut butter over the top of the brownies
