Pizza is one of life’s finer delicacies. Hot melty cheese, soft buttery crust, and all of your favorite toppings. Who can resist? I’ve felt actual pity for the lactose-intolerant. Until now. I’ve been on a mission to find the perfect diary free pizza cheese and I think I’ve got it!
All three of my boys are lactose intolerant and I’ve had a bit of experience myself avoiding diary while I nursed both of my boys. So I speak from experience when I say: sometimes you just need some pizza. While there are some good dairy free alternatives, I found it difficult to find one that melted really well for pizzas. Trader Joe’s is such a hot spot for all things allergy friendly. I actually found this bag of vegan shredded mozzarella while I was staying with my parents and I’ve been buying it ever since. It melts really well, it’s soy free, and tastes really great over a pizza.
Flatbread pizzas, in particular, are great for when you are in a hurry. Homemade pizza dough is amazing but, in reality, pizza is meant to be a quick meal. Right? I use Papa Pita’s Greek Pitas from Win Co but any flatbread or pita will do. It’s quick, easy, customizable, and perfect for Friday night movie night. I can make a kid-friendly pepperoni and red sauce, and a more sophisticated pesto, chicken with artichoke hearts for the hubby and I. The pre-shredded mozzarella just adds to the simplicity of things.
I topped this particular pizza with a few different kinds of tomatoes that were picked from our neighbor’s garden, fresh basil, and (of course) vegan cheese from Trader Joe’s. This cheese is definitely on the salty side so I wouldn’t add anything with even more salt on top. No need to go overboard. Happy creating !
