A classic lemon meringue pie finished in less than 30 minutes.
It’s officially pie season! Or is it always pie season? Either way, it’s about time to make one. I’m putting together a collection of classic fall pies that are so quick and easy to make that anyone can do it. So simple, in fact, that you can’t possibly mess it up. But don’t worry, we aren’t going to sacrifice a single ounce of flavor.
My family ate quite a bit of pie growing up. Thinking back to my childhood, I don’t believe I had even tasted a store-bought pie until after I left for college. Since then, I have been amazed at how many people have never even tasted a homemade pie, let alone made one. I can see why! Pies can be intimidating and time consuming. But they don’t have to be. EVERYONE deserves homemade pies in their life. Everyone.
This lemon meringue pie is my husband’s absolute favorite. It’s prepared almost exactly the same as an ordinary lemon meringue but the filling is cooked in the microwave instead of on the stove top. I was worried that the consistency would be different if the filling was cooked in the microwave, but it isn’t! The results were surprisingly similar!
If you’d like to prepare the filling on the stove top, there are instructions on the side of the pudding box that you can follow. It’s not too complicated! It just requires a little more time and effort. You can use what ever kind of pie crust that you like for this recipe. I’ll link to my favorite crust here. If you have never made pie crust before and are feeling overwhelmed, go ahead a purchase pie crust dough from the store. You can bake it fresh and fill it with homemade filling. Do whatever floats your boat! I will to be doing a pie crust tutorial on my social media channels around Thanksgiving as well. So watch out for that!

The Easiest Lemon Meringue Pie
This is the EASIEST lemon meringue pie recipe you will ever make without sacrificing any flavor. Tangy lemon filling and a fluffy meringue topping
- 1 pie crust
- 4 egg yolks
- 1 large box lemon cook and serve pudding you can also use two small boxes
- 1 cup white sugar
- 4 1/2 cups water
- 4 egg whites
- 1 cup sugar
- 1 tsp corn startch
- 1 tsp vanilla extract
Bake pie crust according to recipe or package directions
In a microwave safe bowl whisk together the egg yolks
Add pudding mix, sugar, and water into the mixture and stir until well combined
Microwave the mixture for 5-6 minutes stopping to stir every 2 minutes
Poor the lemon filling into the pie crust and allow to cool
Preheat oven to 375 degrees
In the bowl of a stand mixture whisk together the egg whites until they become foamy
Add the sugar, vanilla, and cornstarch. Whisk until stiff peaks form. (It's don if you can put the back of the spoon into the mixture and pull up and stiff peaks will form)
Spread the mixture over the top of the pie and form peaks with the back of a spoon
Bake for 10 minutes or until the peaks are golden brown
