Hi there! I’ve been so inconsistent with my blog post lately. I’ve been trying to revamp my site, work on some side projects, and some wedding shenanigans. Now that the dust has settled a bit I’m ready to crank out some awesome recipes for you! But first I wanted to share something with you that I am extremely passionate about: breakfast. Shout-out to all of my breakfast loving peeps!
I am a firm believer is a good, healthy, filling breakfast. But I have a weakness for pancakes! I discovered some gluten-free, oil-free, diary-free, sugar-free (basically super healthy) oatmeal banana pancakes and I LOVE them. My problem was: what do I top them with? I’ve discovered these delicious healthy pancakes, I’m not going to ruin it by drowning it in syrup. No way.
So-I’ve put together a list of 6 of my favorite healthy pancake toppings. Enjoy!
Baked Cinnamon Apples
Apple pie anyone? If you love apple pies, crisps, and cobblers these pancakes are for you. Simply cut up an apple into thin slices and saute them in a small sauce pan with a tablespoon of coconut oil and a sprinkle of cinnamon. Yum!
Dark Chocolate and Raspberries
If you follow my blog you know that I love all things chocolate and berry. I firmly believe that dark chocolate and raspberries are a match made in Heaven. All I did to top these pancakes was melt 2 tablespoons of dark chocolate chips and top with fresh raspberries. So decadent and delicious.
Lemon Juice and Powdered Sugar
This is an oldie but a goodie. Fresh squeezed lemon juice and dusted powdered sugar is a super refreshing way to add a little pizzaz to your pancakes. Of course, this adds a bit of sugar to the mix but it is much less than dowsing your pancakes with syrup.
Peanut Butter and Banana
You don’t have to be a little kid to appreciate peanut butter and bananas. I like adding the extra protein to my pancakes and and letting the bananas sweeten it up a bit. Quick tip: melt the peanut butter in the microwave or 20-30 seconds for easy pouring
Strawberries and Greek Yogurt
I saved the best for last. Strawberries and honey vanilla
